Delicious and healthy raw vegan sushi! Sushi was my favorite meal before I went vegan, and so when I went vegan I started eating the veggie rolls in restaurants, and now I make them myself. They are delicious and much healthier! The beauty of making it yourself is that you decide what you want to put in your rolls 🙂
Traditionally sushi are made with white rice which isn’t very nutritious and can be difficult to digest, so I started making it with cauliflower ‘rice’ and I love it! RECIPE INGREDIENTS Cauliflower rice: 2 1/2 cups cauliflower 1/4 avocado Filling: Romaine lettuce 6-8 strands of cucumber 3/4 avocado sliced (use less to make it more low fat) 1/2 bell pepper sliced (red, yellow or orange) 1/2 cup carrots grated 4 nori sheets (I used toasted nori sheets, but use raw if you prefer) For the rice, pulse the cauliflower in a food processor. Add the avocado and pulse again. To make the rolls, take your nori sheet (shiny side down) and place the ‘rice’ on the sheet leaving 2 inches on top and 1/2 inch on the bottom. Put all the filling ingredients on top on the side closest to you. Roll! Cut them in bite size pieces, and enjoy:) Note: Feel free to add in ingredients or replace as you wish. If you want to make it lower in fat, just substitute the avocado roll for another fully garnished roll. Also, mango rolls might be good!
